1 KILO WHOLEMEAL FRUIT & NUT RYE SOURDOUGH
Organic Ontario rye, mixed with organic pumpkins seeds, hazelnuts and dried fruit- alternates with prunes, raisins, cranberries and currants.
Inspired by delicious rye breads I ate in various parts of Europe.
650 GM SOURDOUGH DRIED FRUIT &ANISE WITH SESAME
A wholemeal Redeemer and cornmeal loaf studded with an alternating selection of apple, pear or fig. Scented with anise seed and rolled in sesame.
I had a lot of dried figs I was no longer using and same with the anise seed- turns out they are great in bread. One of my personal favs.
1.2 KILO WHOLEMEAL RYE SOURDOUGH
this Estonian style rye, is not too sour. The crumb is soft and fragrant. Makes fabulous toast.
This recipe is from my friend Laura Valli, who is Estonian and got her PhD in rye breeding!!
700 GRAM BRIOCHE
Made with wholemeal Redeemer and White fife and an oat porridge, this brioche is soft, yet has heft and loads of flavour. it has a leaven, but also contains commercial yeast.
This formula is heavily based on one by my friend, Charbel Abrache. Pastry chef extraordinare down in D.C.

V/GF BUCKWHEAT CHOCOLATE GINGER COOKIES
Like little brownie bombs of gingery chocolate goodness. the earthiness of the buckwheat really plays well with chocolate and candied ginger.

Triple types of ginger is the key to the bite of this cookie, and a little black pepper and mustard bring it over the top. A truly unique cookie.

Chocolate Rye Shortbread with sea salt
Well ,the name pretty much says it all. 100% rye, with cocoa powder, sugar and loads of butter. Studded with chocolate pistoles and cocao nibs. Topped with a little hat of maldon sea salt.

Thick rolled oats from Quebec, baked with maple syrup, butter and honey. Some pumpkin and sesame seeds to keep it interesting. Enough salt to cut the sweetness.
